Quandong Rhubarb Compote
6 stalks rhubarb peeled (peel off red stringy parts like celery then chop into small pieces)
2 teaspoons Quandong Peach Powder Superfood (Bushfoods, projectyoubewell.com or Amazon)
1 ½ cups fresh organic strawberries
4 Bosc pears chopped (no skin)
¼ teaspoon of NuStevia (NuNaturals)
1 tablespoon maple syrup
Put all ingredients in a saucepan, add 3 tablespoons water, then cook on medium low heat for 30-40 minutes until compote is soft like a jam. (optional: let sit overnight and becomes sweeter the next day) serve on coconut kefir, in a crepe or on yogurt.
